Maple Roasted Parsnips


This is fast becoming my new favorite side dish.  Amazing things happen when the maple syrup cooks down… it becomes sticky and almost candy like.  I urge you to try this dish tonight!  Parsnips are very inexpensive and who doesn’t have some maple syrup on hand?  (Pssst…. if you don’t, you can substitute with honey!)

  • 1 bag of parsnips
  • 2 tbs maple syrup
  • salt and pepper

Preheat oven to 400.

Peel and remove ends from parsnips.  Halve them length wise and cut into about 2″ chunks.  Toss them in a baking dish with maple syrup, salt and pepper.

Roast for about 30 minutes.

Remove, allow to cool (don’t burn your mouth because you can’t wait like me) and enjoy!
