saturday afternoon in dc

james and i decided to head into dc for a late lunch today at a place we’ve been wanting to try for a while – founding farmers.  everything is made fresh, in house including breads, pastas, sauces and even their cocktail infusions.

before heading over there though, we made a pit stop at elephant and castle, a pub with some surprisingly interesting drinks on the menu.  like this one for instance:  tanqueray, fresh lime, jalapenos and cilantro.   soooooo good.

cucumber sake shots!

super easy, and you’ll impress your guests with the awesome presentation!

simply peel a cuke leaving little strips to make it prettier.  cut into about 2″ sections and using a melon baller, hollow out the inside.  next, pour your favorite sake in and shoot!

sumac the knife

feast your eyes on the latest concoction from brew dc otherwise known as my husband james and his bestie brady (or braids as i call him).

it’s a take on a french saison that’s been infused with sumac berries.

if you’re not familiar, sumac has a very lemony taste and is often used in mediterranean cooking.

the result is a crisp, light, refreshing beer with a citrusy spice that goes down easy.

cheers!

mexican martini

two of the most awesome cocktails ever got together, made a boozy baby and it’s name is the mexican martini.

a cross between a martini – thanks to the olives –  and a margarita, this drink is nothing short of spectacular!

if you’ve never had one, you must take the necessary steps to rectify this immediately.

  • 2 ounces silver tequila
  • 1.5 ounces Cointreau
  • 1.5 ounces freshly squeezed lime juice
  • 1 ounce sour mix
  • 1.5 ounces orange juice
  • 1/2 ounce olive juice
  • 3 pimento-stuffed green olives

put everything except the olives in a cocktail shaker with ice.  give it a good shake and strain into a chilled martini glass with olives.

Pomegranate Spritzer

Came up with this one the other night after finding a can of pineapple juice tucked away in the back of the fridge.

  • 1 ounce pineapple juice
  • 1 1/2 ounces light rum
  • 4 slices of cucumber
  • one lime
  • about 4 ounces of pomegranate soda*

Halve your lime and squeeze one half into your glass.  Quarter the other half and toss the 4 pieces into your glass.

Muddle the lime along with your cucumber slices.  If you don’t have a muddler, you can use the back of a wooden spoon but I’d highly recommend getting one.  They’re fairly inexpensive and automatically up your chances for coming up with awesome drink concoctions.

Add in ice, rum, pineapple juice and top off with pomegranate soda.  Garnish with a slice of cucumber and drink!

*We used this one by World Market but if you don’t have a World Market near you or you can’t find a pomegranate soda, just substitute pomegranate juice and top off with club soda for effervescence.

Beet’ini cocktail

beetini

A recent search of the dark reaches of our fridge inspired a new cocktail for us the other day.  Gretchen’s favorite martini has always been a Ketle One, extra dirty martini, but I couldn’t find a jar of olives in the fridge with enough leftover juice to make a cocktail.

Guilt Free Coffee Cooler

coffee

This drink is virtually guilt free because it’s really low in calories and fat, and it’s a heck of a lot cheaper than what your neighborhood Starbucks is shelling out for around $5 a pop!  (Sorry Dad)

Now, I’m no coffee connoisseur.  I prefer my Folgers crystals over that bitter tasting stuff any day.  (Again, sorry Dad)  However, this drink has quickly become one of my favorite go-to pick me ups!

The coffee in this gives you the extra jolt of energy while the addition of malt powder and crushed ice feel like you’re being really bad when in fact, you’re not.

  • 1 tbs instant coffee
  • 1 tbs chocolate syrup
  • 3/4 – 1 cup hot water depending on size of glass
  • 1 tbs fat free half and half
  • 1 tbs malted milk powder (I used Nestle Carnation brand)
  • crushed ice
  • Fat free Reddi Wip topping

Start by putting a pot of water on to boil.

Place instant coffee in a large glass and add your hot water.   Add in chocolate syrup, malt powder and half and half and stir to combine.  Fill with crushed ice, top off with Reddi Wip and extra chocolate syrup, grab a straw and enjoy!

Ginger Spritzer

gingerspritzer

This low-cal spritzer really pops with the addition of fresh grated ginger.  Try it out as a flavorful alternative to a vodka or gin and tonic.

Ingredients:

  • 2 shots white rum (or substitute your favorite vodka or gin)
  • 1/2 can seltzer water
  • 1 handful fresh mint
  • Crushed ice
  • 1 tsp splenda*
  • 1 tsp fresh grated ginger
  • Juice of half a lemon

Directions:

  1. Add your crushed ice to a glass as well as your mint, ginger, lemon juice and sweetener of your choice.
  2. If you have a muddler, use it to bruise the mint and really bring the flavors out.  The crushed ice is key here as it acts as an abrasive to help break everything up.  If you don’t have a muddler, simply use the handle of a wooden spoon.
  3. Add in your rum, a bit more crushed ice and top off with seltzer.  Ahh!!!  Very refreshing.

Tips:

  • you want to use splenda or something similar as sugar wouldn’t dissolve in the cold liquid.  If you’re not a fan of sugar substitutes, you could always make a simple syrup and add that to the drink
  • Making a simple syrup is just that – simple.  Combine equal parts sugar and water 1 cup sugar, to 1 cup water and add to a small sauce pan.  Bring mixture to a boil.  Once all the sugar has dissolved into the water, remove from heat and allow to cool before adding to your drink.
