Cuban Black Bean Dip

Although the black beans got top billing, the olives are really key here.  They add a surprising pop of saltiness that pairs well with the richness of the beans.

  • 1 15 oz can black beans, rinsed drained
  • 1/4 cup lime juice
  • 1/4 cup green olives w/ pimentos plus 3 tbs juice from the jar
  • 2 cloves garlic
  • 1/2 tsp cumin
  • 1/8 tsp cinnamon
  • 1/2 tsp oregano
  • handful of fresh cilantro
  • salt and pepper to taste

Simply combine all ingredients in the food processor until smooth and creamy.   We served ours with plantain chips but you could substitute tortilla chips and/or your favorite veggies.
