
Gnocchi is one of James’ favorite dishes but on a busy weeknight, making fresh gnocchi just isn’t an option. Luckily, there are a ton of great prepared ones on the store shelves these days. For those of you who are unfamiliar with the awesomeness that is gnocchi, they are basically little potato filled pasta pillows of yumminess. If you’ve never had it, or even if you have, go pick yourself up a bag and try out this easy, deliciously satisfying meal tonight!
- 1 bag of store bought gnocchi
- 1 tbs olive oil
- 1 white onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 bunch of asparagus, cut into bite size pieces
- 1/2 cup red wine
- salt and pepper
- 1/4 cup grated parmesan
- handful of flat Italian parsley, chopped
Add olive oil to a hot pan and saute onions and garlic a few minutes on medium heat. Let the onions go a few minutes more and when they begin to stick to the pan a bit, add in a bit of wine. The wine will deglaze the pan and allow the onions to continue caramelizing without burning. Keep repeating this process until your onions are a deep shade of brown – about 15 minutes give or take. I used about 1/2 cup of red wine however, you may end up using a bit more or less.
While your onions are browning, get a large pot of water boiling and cook your gnocchi according to package instructions. Be careful not to overcook!
Use a slotted spoon to transfer your gnocchi to the pan with your onion mixture. Also add in your asparagus and peas along with a bit of the pasta water. Allow to cook about 5 minutes or until peas and asparagus are tender. Season to taste with salt and pepper and finish by adding in parmesan cheese and parsley.

I have never been a big fan of gnocchi, but I think I might try this dish
